How to make this week easy

  • Buy all five bell peppers on the first trip. Whole peppers keep in the fridge for more than a week, and they cover four dinners.
  • Freeze the chicken and the ground beef as soon as you get home, and thaw them overnight in the fridge before cooking.
  • Drain and rinse each can on the day you cook it. Store any opened beans in a sealed container in the fridge and use them within a few days.
  • Sunday: dice the three onions for Tuesday to Thursday and seal them in a box in the fridge.

Questions

How much meat is in the week?

Three dinners have meat: 300 g of chicken on Monday, 300 g of ground beef on Wednesday and 150 g of smoked bacon on Friday. Tuesday and Thursday are meat-free.

Can I make the chili ahead?

Yes. Cooked chili keeps in a sealed container in the fridge for three to four days, so a double batch can cover a second meal.

Do I need dried beans?

No. Every bean here comes from a can, so there is no overnight soaking.
